Vanilla Chia Seed Pudding

Are you looking for ways to change up your morning breakfast? Or do you want a healthier snack option when you get hungry? This protein and fiber-enriched recipe has what you need to get through the day and have you still enjoying what you are eating. The berries and fruits compliment the subtle flavors of the chia pudding and its fancy look adds a unique touch.

Fruit can be used to make this dish look like a fancy dessert, simply by slicing strawberries or making unique cuts with other fruits to top the pudding off.

The pineapple in this pudding really added a new experience to how I usually make the pudding by giving it a tropical blend.

Eating healthy is something I really think that everyone should at least try to incorporate in their daily meals. I love things like chips, and cookies, and I mean who doesn't love carbs? But sometimes, when I have things like this chia seed pudding to substitute those out with, it makes me feel much healthier and my body thanks me later.


Black chia seeds are filled with many nutrients that could give you the energy you need to get through the day. It contains high forms of protein, fiber, calcium, and other important nutrients, especially if you have gut or stomach-related problems like myself. They are also rich in antioxidants, which is important in this time of year. With this recipe, you can mix it up in many different ways. It allows you to change up the recipe slightly so that you get many different flavors out of the base dish. Try different fruits like mangoes, blueberries, and even blackberries. You can even try other non-dairy milks like coconut milk, or flavored almond milk. Who knows, this could possibly be your new go-to breakfast item!


 

Prep Time: 5 minutes Serves: 2 People

Sit Time: At least 2 hours

Total Time: 2 hours, and 5 minutes


INGREDIENTS

  • 1/4 cup Black Chia seeds

  • 1 cup Almond Milk (I use the unsweetened)

  • 1 Tbsp. Honey

  • 1 tsp. Imitation Vanilla extract (if you are using pure vanilla, use only 1/2 tsp)

  • 4 Strawberries, (2 diced, and 2 sliced for decorating the glass)

  • 1/4 cup Pineapple, divided

  • Handful of Raspberries


INSTRUCTIONS

  1. In a small bowl, mix the almond milk, chia seeds, honey, and vanilla together until thoroughly combined and honey is no longer clumped.

  2. Allow the mixture to sit for 5 minutes, then mix again.

  3. Cover the mixture in the bowl with aluminum foil and allow it to set in the fridge for at least two hours, until desired thickness is reached.

  4. Get two small glasses and divide the chopped pineapple into each to create a base layer at the bottom of each glass.

  5. Next, place the sliced strawberries on the sides of the glass (this step is completely optional).

  6. Once it has set for a couple of house, scoop the chia pudding into each glass till you reach about halfway.

  7. Once you have reached that, create a layer of fruit with the diced strawberries.

  8. Fill the rest of the glass up with the chia pudding.

  9. Garnish the top of the glass with the raspberries, some strawberries, and pineapple.

  10. Let the pudding sit overnight and enjoy it the next day!
