Lemon Chicken Wraps

Wraps and sandwiches are a hit with everyone because they are so versatile and you can pick and choose what you want to pair with the deliciously cooked meat you go with. Similar to chicken shawarma and shish tawook, this recipe uses marinated chicken that I then sauteed until it was golden and slightly charred. The flavors in the marinade are so powerful and work beautifully together. I made sure to really pull out that lemon flavor by using the juice and zest of a lemon along with other ingredients like garlic and Mediterranean spices. Make this customized to your liking by using whichever toppings you prefer!

I made a homemade spicy mayonnaise sauce to spread on the bread before adding the chicken and toppings and it was just the right touch!

Because of the spicy mayo and the stronger flavors in the chicken, I like to use more subtle additions like cucumbers and lettuce to compliment the wrap.

If family dinner are one thing you struggle with in the kitchen, then this dish is just right for you. Set up everything on the counter and have it all "make your own" for each family member. This way you don't have to worry about what each person likes on their wrap. I like the place all of the toppings on a serving platter along with the cooked chicken, that way everyone has a chance to customize their own wrap!


Some of my favorite toppings for sandwiches and wraps like these are sliced cucumbers, tomatoes, lettuce, pickled turnips, and spinach. They all have cooler flavors and are crunchy and delicious options which provides a nice texture in the wrap! If you are trying to eliminate carbs from your diet, switch up the bread for a bowl of lettuce and top it with the chicken and toppings for a lettuce bowl!

 

Prep Time: 10 minutes Serves: 4 People

Cook Time: 30 minutes

Total Time: 40 minutes


INGREDIENTS

  • 2 Boneless Skinless Chicken Breasts, cubed

  • 2 Tbsp. Olive Oil

  • 2 Cloves of Garlic, minced

  • Zest and Juice of 1 Lemon

  • 1 Packet of Goya Sazón Tomato and Cilantro

  • 1/8 tsp. Black pepper

  • 1/2 tsp. Paprika

  • 1/2 tsp. Oregano

  • 1/2 tsp. Cumin

  • 1 tsp. Dried cilantro

  • 1 tsp. Salt

  • 1 tsp. Mediterranean Herb Weber Grills Spice

Wrap Toppings:

  • 3-4 Flat Pita Bread Slices

  • Sliced Tomatoes

  • Sliced Cucumber

  • Sliced Pickled Turnips

  • Chopped Lettuce

  • Chopped Spinach

Spicy Mayo Sauce

  • 1/2 cup Mayonnaise

  • 1/2 cup Greek Yogurt

  • 1/2 tsp. Garlic Powder

  • 1/2 tsp. Garlic Sriracha Spice

  • 1/4 tsp. Crushed Red Pepper

  • Salt and Pepper, to taste

  • Juice of 1/2 a Lemon


INSTRUCTIONS

  1. In a medium bowl combine the cubed chicken and all of the marinade ingredients together. Make sure all the chicken is coated and allow the chicken to marinate for at least 30 minutes in the refrigerator, covered.

  2. While the chicken is marinating, mix all the ingredients for the spicy mayo together. Set the condiment aside and refrigerate it until ready to use.

  3. Prepare all toppings and set them aside as well until you're ready to assemble the sandwiches.

  4. In a large skillet, cook the chicken for about 15-20 minutes, on top of the stove on medium heat until the chicken is cooked through and there is no more liquid in the pan. I like to caramelize the chicken and get the chicken a nice brown color before serving.

  5. To assemble: spread the mayo sauce on the pita bread (I softened the bread in the microwave for 10 seconds before using). Add the chicken and desired toppings.

  6. Serve and enjoy immediately!
