Roasted Squash Medley

Roasted vegetables are some of the most delicious and flavorful side dishes you can serve with dinner. This colorful yellow squash and zucchini dish is very healthy and tasty, packed with beautiful spices! I layered them in a glass dish after tossing them in olive oil and various seasonings to coat them evenly. I garnished the squash at the end with refreshing yellow and red cherry tomatoes and a sprinkle of Parmesan cheese! Yum!

I made sure to get the Parmesan toasted so that the vegetables has a slight texture to them!

If you're in a rush with no time to layer, toss the squash onto a baking sheet instead!

If you want to know just how yummy these vegetables were, let's just say they were devoured in minutes. I love serving roasted vegetables alongside steaks or chicken to replace carbs. They also just pair really well with proteins and have such a balance of flavors. I kept this vegetable mix simple by using zucchini squash, yellow squash, and a few tomatoes. The flavors matched perfectly and everything combined evenly.


You can choose to opt out on the Parmesan cheese to make this dish even healthier. I, however, happen to like the added flavor and texture it gives to the dish. Instead of having soft vegetables, the Parmesan gives a tiny bit of crunch on the exterior of the vegetables that I really enjoy!

 

Prep Time: 10 minutes Serves: 4 People

Cook Time: 30 minutes

Total Time: 40 minutes


INGREDIENTS

  • 2 Zucchini Squash, cut into 1/2-in thick rings

  • 2 Yellow Squash, cut into 1/2-in thick rings

  • 2 Tbsp. Olive Oil

  • 3 Cloves Garlic, minced

  • 1 Tbsp. Oregano

  • 1 Tbsp. Basil

  • 1/2 Tbsp. Salt

  • 1 tsp. Italian Seasoning

  • 1 tsp. Paprika

  • 1/2 tsp. Black Pepper

  • Handful of Cherry Tomatoes

  • 1/4 cup Parmesan Cheese


INSTRUCTIONS:

  1. Preheat the oven to 400 degrees Fahrenheit.

  2. In a large bowl, combine the zucchini, yellow squash, olive oil, garlic, oregano, basil, salt, Italian seasoning, paprika, and black pepper. Coat the squash evenly

  3. In a round glass dish, beginning on the outer edge, make a ring of squash, alternating between the zucchini and yellow squash.

  4. Once that ring is complete, Make another ring inside of that, using the same alternating process.

  5. Garnish with the cherry tomatoes.

  6. Sprinkle the Parmesan cheese over the whole dish.

  7. Bake for 25 minutes, until the vegetables are cooked and the cheese has turned to a golden brown.

  8. Serve and Enjoy!
