Roasted Parmesan Potato Wedges

Potato wedges are just the fancier version of a french fry - and these are an even healthier alternative by being baked instead of fried! These Parmesan-crusted wedges are extremely flavorful and reminded me of the street food you can get in downtown areas. They have a slight crisp on the outside and are so fluffy on the inside, it's perfect! Serve them with a classic ketchup like I did, or switch it up with some ranch!

These are a great side to serve when making sandwiches, burgers, or even fried chicken!

While these are cooking in the oven, they give off such an amazing smell that makes you want to eat them instantly!

I have been experimenting with the perfect roasted potato recipe for quite a while. They either came out too salty, not crispy enough, or completely dried out. All of these factors can make potato wedges not what they should be. However, I have finally come up with the perfect recipe that was approved by my husband! We devoured all of them in one sitting (oops..)! We served these with the classic ketchup because the wedges are already packed with beautiful flavors that we didn't want to take away from that! They had a nice crunch in that first bite you take, and then the inside of the potato just melts in your mouth. If you like KFC's famous potato wedges, then you will LOVE these!

 

Prep Time: 5 minutes Serves: 2 People

Cook Time: 30 minutes

Total Time: 35 minutes


INGREDIENTS

  • 2-3 Large Russet Potatoes, sliced into wedges (keep the skin)

  • 1/4 cup Olive Oil

  • 1 tsp. Salt

  • 1 tsp. Garlic Powder

  • 1 tsp. Parsley

  • 1/2 tsp. Paprika

  • 1/2 tsp. Black Pepper

  • 1/2 tsp. Dried Cilantro

  • 1/4 tsp. White Pepper

  • 1/4 cup Grated Parmesan Cheese


INSTRUCTIONS:

  1. Preheat the oven to 400 degrees Fahrenheit.

  2. Spray an aluminum foil-lined tray with vegetable cooking spray.

  3. Mix all of the ingredients in a large bowl, and make sure the potato wedges are coated evenly with the oil and all of the spices.

  4. Spread the wedges evenly on the tray, laying flat on one side.

  5. Sprinkle half of the Parmesan cheese on the side of potato wedges that is facing up.

  6. Bake for 15 minutes. Flip the wedges on to their other side and sprinkle with the rest of the Parmesan cheese.

  7. Cook for another 15 minutes.

  8. Serve and Enjoy!
