Hispanic foods are all seasoned in many different ways based on the specific country and what's available surrounding that city or region. Peruvian meals tend to have a more simpler base with a sauce that brings in most of the strong flavors. I decided to do the same and seasoned some bite-size chicken breasts with different spices, some lime juice, olive oil, and garlic. I then made a delicious and mild jalapeño sauce that I drizzled over the cooked chicken for added flavor, texture, and color. It was such a simple and delicious meal and all of the ingredients came together to create a lovely entree for dinner!
Keeping some of the jalapeño seeds in will definitely make the sauce spicier if that's what you prefer!
For leftovers, I reheated the chicken in a skillet and coated the chicken with the rest of the jalapeño sauce. This kept the chicken from drying out and it was full of flavor!
Although I am not Peruvian, I really love experimenting with ingredients and dishes from all over the world. It gives me so many different ideas for future recipes and allows me to really open up my palate and try unique combinations of foods that I would have never thought to cook together. So far on my blog, I have tried to showcase a variety of dishes from all over the world: Philippines, Mexico, Lebanon, Italy, Brazil, and so many other beautiful countries!
In this take on a Peruvian recipe, I was able to see how such simple flavors can really create an extremely delicious meal! You don't have to go crazy with spices or sauces to make a dish stand out - you just have to know what to mix together for a tasty dish!

INGREDIENTS
3 Boneless, Skinless Chicken Breasts, cubed
3 Tbsp. Olive Oil
Juice of 2 Limes
4 Cloves of Garlic
1/2 Tbsp. Salt
1 tsp. Paprika
1/2 tsp. Black Pepper
1 tsp. Cumin
1 tsp. Dried Oregano
2 tsp. Sugar
For the Jalapeño Green Sauce:
3 Jalapeños, seeded and roughly chopped
1 cup Fresh Cilantro
2 Cloves of Garlic
1/4 cup Mayonnaise
1/4 cup Sour Cream
Juice of 1 Lime
1 tsp. Salt
1/4 tsp. Black Pepper
1 Tbsp. Olive Oil
INSTRUCTIONS:
In a large bowl, toss in the cubed chicken.
In a food processor, add in the rest of the ingredients for the chicken marinade. Puree for about 30 seconds until you have a thick marinade. Pour the sauce over the chicken and coat the chicken evenly.
Cover the bowl with a plastic bag or foil and refrigerate it for at least an hour.
Once the chicken is done marinating, heat a large skillet over medium-high heat. Add in the chicken and begin sauteing it until it is fully cooked and has a golden brown color on the outside. There should be no liquid left in the skillet.
Once the chicken is done, place all of the green sauce ingredients into the food processor. Blend until you have a smooth sauce, about 20-30 seconds.
Serve it alongside the chicken as a dipping sauce or drizzle it on top of the chicken.
