Musakhan is typically a traditional Palestinian dish served on homemade flat pita bread. It is a mix of grilled onions and chicken with a beautiful array of spices tossed over a fluffy homemade bread. This dish has a bit of a twist in case you can't get your hands on some pita bread!
Garnishing with some lemon slices and parsley breaks up the color and adds simple presentation to the dish.
The thin flatbread allows you to soak up all of the flavors in the chicken and onion!
Whenever I would crave musakhan, my mom would always dread it because of the amount of work that needed to be put in for this dish. So when I began living on my own, I thought to myself, how can I make this dish in a simpler way and still enjoy it just as much as the original?
The ready-made flatbread that I used in this recipe cuts down a lot of the time and it gets crispy which adds some texture to the dish! I used a whole-wheat flatbread as a healthier alternative as well.
The combination of the flavors really just hits home for me, with the caramelized onions and sumac. What was supposed to be food for two days, was devoured in one sitting (it was that amazing)!

INGREDIENTS
1 package Whole wheat flatbread (I used Joseph's Flatbread brand)
For Onions:
1 1/2 Red onion, thinly sliced
1 Yellow onion, thinly sliced
2 Tbsp. Olive Oil
2 Tbsp. Sumac
1/2 tsp. Cumin
1/2 tsp. Salt
1/4 tsp. Black Pepper
For Chicken:
2 Boneless, skinless chicken breast, cut into cubes
2 Tbsp. Olive Oil
1 Tbsp. Sumac
1/2 Tbsp. Paprika
1/2 Tbsp. Allspice
1/2 Tbsp. Garlic Powder
1 tsp. Salt
1/4 tsp. Black Pepper
INSTRUCTIONS
In a large skillet, heat the oil for the onions over medium heat.
Once heated, add all of the onions along with the spices for the onions.
Stir until all of the onions are coated evenly with the spices.
Continue to cook for 20 minutes, until onions are transparent and caramelized.
Remove from heat.
In another large skillet, heat the olive oil for the chicken over medium heat.
Add the chicken and all of the spices for the chicken.
Cook for 10-15 minutes until all the chicken is cooked with no pink throughout.
If the chicken is fully cooked, remove any excess water.
Add the onions with the cooked chicken and cook for about 5 minutes so that the flavors can combine.
Place the oven on Low Broil
On a separate baking tray, drizzle some olive oil then place the flatbread on the tray.
Next, drizzle a small amount of olive oil onto the flatbread so that both sides are just lightly coated and don't stick the the tray.
Scoop the chicken and onion mix onto the flatbread and spread evenly.
Broil on Lo for about 5 minutes so the bread can get crispy.
Slice and Enjoy!
