Moroccan-Spiced Chicken

If you are looking for a chicken recipe that is exploding with different flavors and aromas, then you definitely need to try this one out! The smell alone is worth making it! The great thing about this dish is it's baked, and you get your protein so it's a healthy part of dinner that you can add on top of some quinoa or brown rice! The pieces of chicken breast were so colorful and the bake kept them tender and juicy! These were a big hit!

I served this chicken on the side with salad and empanadas, but it would work great next to anything!

I broiled the chicken a few minutes at the end to get a beautiful color on the outside of the chicken.

The only parts of the chicken that my husband and I usually eat are chicken breast and chicken wings. Because of that, I try to spice and create different ways to eat it! I decided to use some Moroccan-inspired spices and flavors and it was so good! The ginger, garlic, cilantro and other ingredients blended together so well!


This recipe will definitely be my go-to when I am hosting dinner! You can grill or bake the chicken, but I decided to bake them covered for optimal juicy chicken!

 

Prep Time: 2 hours Yields: 8 Chicken Breasts

Cook Time: 1 hour

Total Time: 3 hours


INGREDIENTS

  • 8 Boneless, Skinless Chicken Breasts

  • 1/2 cup Olive Oil

  • 4 Tbsp. Fresh Lemon Juice

  • 5 Cloves Garlic, minced

  • 2 Tbsp. Fresh Ginger, peeled and minced

  • 3 tsp. Ground Cumin

  • 2 tsp. Salt

  • 1 tsp. Black Pepper

  • 2 tsp. Ground Coriander

  • 2 tsp. Paprika

  • 1/2 tsp. Cinnamon

  • 1 tsp. Turmeric

  • 1/2 cup Fresh Cilantro, chopped


INSTRUCTIONS:

  1. Gently pound the chicken breasts so their thickness is even throughout.

  2. gently score the top of the chicken so that the flavors can go inside of the chicken

  3. Place them in a gallon-size freezer bag.

  4. Add all of the ingredients into the freezer bag with the chicken. Coat the chicken evenly.

  5. Allow the chicken to marinate for at least 2 hours in the fridge.

  6. Preheat the oven to 300 degrees.

  7. Place the chicken and the marinade in a baking pan and cover with aluminum foil.

  8. Bake for 45 minutes, covered.

  9. Place the oven on Low Broil.

  10. Continue to cook the chicken for about 10 minutes uncovered, to achieve a golden color on the top. Do not leave it longer, as it will dry up the chicken breasts.

  11. Serve and enjoy!
