Grilled Chicken Kabobs and Garlic Mashed Potatoes

If you have an electric grill, and don't have any recipes to put it to use, I have the perfect dish for you! These vegetable and chicken kabobs are extremely delicious and their citrus-y, garlic flavors create such a savory meal. I made these with my homemade, fluffy mashed potatoes for dinner and they paired very well!

I found these versatile wooden serving plates at Ross! I am always looking for different ways to serve my food, and I thought they were perfect!

The vegetables added their own flavor to this dish, and it complimented the marinated chicken so well.

I love this take on grilled chicken. The flavors are inspired by the beautiful spices in Mexican food. They have just a little bit of heat, great lime flavor, and of course, garlic. Cooking these on the electric grill took no time at all and I could never get tired of this dish!


The homemade garlic mashed potatoes were also delicious. Mashed potatoes are a side dish that are so simple, but sometimes very difficult to get just right. I have a fool-proof recipe for you that adds just the right amount of flavor, creaminess, and fluffy texture!

 

Grilled Chicken Kabobs


Prep Time: 25 minutes Serves: 2 People

Cook Time: 10 minutes

Total Time: 35 minutes


INGREDIENTS

  • 3 Boneless, Skinless Chicken Breasts, equally cubed

  • 1 Green Bell Pepper, chopped into the size of chicken breasts

  • 1 Red Bell Pepper, chopped into the size of chicken breasts

  • 1 Yellow Bell Pepper, chopped into the size of chicken breasts

  • 8-10 Cherry Tomatoes

  • 1/3 Red Onion, chopped into the size of chicken breasts

For the Marinade:

  • 3 Tbsp. Olive Oil

  • 1 Fresh Lime, squeezed

  • 1 Tbsp. Salt

  • 1 tsp. Paprika

  • 1 tsp. Garlic Powder

  • 1 tsp. Dried Cilantro

  • 1 tsp. Garlic Sriracha

  • 1/4 tsp. Chili Pepper Powder

INSTRUCTIONS

  1. In a small bowl, mix the ingredients for the marinade together. Set aside.

  2. In 2 medium-sized bowls, put the chopped vegetables in one, and the chopped chicken in another.

  3. Divide the marinade in half and pour each half on the vegetables and chicken.

  4. Cover the vegetable and chicken bowls and refrigerate them for 20 minutes.

  5. Put your electric grill on medium-high, on pan-sear or grill.

  6. Begin adding the chicken and vegetables on the skewer, with a few different vegetables between each chicken piece. This balances the natural flavors of the the chicken and vegetables together.

  7. Place the skewers of chicken on the grill and cook with the lid on top for 3-4 minutes.

  8. Turn the skewers over and cook for another 3-4 minutes.

  9. Continue to turn the chicken until they are perfectly cooked and seared on the outside.

  10. Serve and Enjoy!


 

Garlic Mashed Potatoes


Prep Time: 5 minutes Serves: 2 People

Cook Time: 25 minutes

Total Time: 30 minutes


INGREDIENTS:


4 Golden Russet Potatoes, chopped

1/4 cup Sour Cream

1/4 cup Butter, softened

1 Tbsp. Dried Parsley

1 tsp. Garlic Powder

Salt and Black Pepper, to taste


INSTRUCTIONS

  1. In a large pot, place the chopped potatoes and enough water to cover the potatoes. Bring to a boil, then lower the heat to medium-low and cook for about 20 minutes, until they are soft.

  2. Drain the potatoes in a colander.

  3. Place the cooked potatoes back in the pot.

  4. Mash the potatoes using the bottom of a cup or a special masher.

  5. Mix in the rest of the ingredients, just until the ingredients are combined. Over-mixing can cause the potatoes to become stiff.

  6. Serve and sprinkle with parsley for garnish.

  7. Enjoy!
