Greek Mediterranean Flatbread

This delicious vegetable flatbread was inspired by the Greek flavors that are used in Mediterranean dishes. There is no sauce at the base and I decided to leave out meat for this recipe, to focus on the beautiful earthiness of the vegetables I chose. These flavors combined create a delicate lunch or appetizer that is very tasty and will be loved by everyone!

I drizzled 100% Extra Virgin olive oil for a crispy and flavored crust that really added to the Greek flavors.

Each vegetable used carries its own distinct flavor that impacts and completes this dish.

In my home, we love getting creative with pizzas and flat breads. They are so versatile and always come out incredibly delicious, especially when you have all of your favorite ingredients in one dish! I decided to go with a no sauce base for this recipe for a lighter and crispier meal. I have also been experimenting a lot more with Mediterranean flavors because they are so delicate yet extremely flavorful.


For this recipe, I took the easy route and bought ready-made dough from the grocery store. However, you can always be a little more adventurous if you have the time and make your dough from scratch! If you haven't worked with some of these toppings before, give them a try and I am positive you will love them!

 

Prep Time: 10 minutes Yields: 2 Flat Breads

Cook Time: 15 minutes

Total Time: 25 minutes


INGREDIENTS

  • 2 Rolls of Ready-Made Pillsbury Pizza Dough, thin crust

  • 1 Tbsp. Olive Oil, divided

  • 1 Red Bell Pepper, chopped

  • 1/2 cup Kalamata Olives

  • 1/2 cup Cherry Tomatoes, halved

  • 1/4 cup Artichoke Hearts, from a jar

  • 1/4 cup Feta Cheese

  • 4 Cloves Garlic, minced

  • 2 Tbsp. Fresh Parsley, chopped

  • 1 Lime, freshly squeezed

  • 1 Tbsp. Fresh Thyme

  • 1 tsp. Oregano

  • 1/2 tsp. Salt

  • 1/4 tsp. Black Pepper


INSTRUCTIONS:

  1. Preheat the oven to 400 degrees Fahrenheit.

  2. Grease 2 9x13 baking trays.

  3. Roll out each dough on the greased pans, and drizzle them with 1 Tbsp. each of olive oil.

  4. In a medium bowl, mix together the rest of the ingredients until evenly combined.

  5. Spread half of the mixture on one pizza dough, and the other half on the second pizza dough.

  6. Place them both in the oven, one on the top rack and the other on the bottom rack.

  7. Bake for 15 minutes, switching the pizzas halfway through to get an even bake on them.

  8. Slice and Serve!
