Fasoolia Khadra - Green Beans in a Tomato and Beef Stew

Stews are a very big part of Palestinian cuisine. Green bean stew is a popular dish that is perfect to eat as the weather gets colder. The flavor of the beef chunks marinated with the tomato base, mixed with the tasty green beans goes great with a side of rice or some pita bread!


Tomato-based dishes are so savory and give added flavor without using too many spices.

Fasoolia wasn't always my favorite dish as a child. But I have slowly started to appreciate my greens a lot more as I get older. They also make cooking so much fun because you can create so many different dishes with our selection of vegetables.


Some people prefer to cook their meat on the side with this dish. That's how I made it the first time but I felt the stew was missing something. This time around I added beef stew chunks in the dish and it made all of the difference. It was so delicious that we didn't have enough for leftovers the next day!


 

Prep Time: 5 minutes Serves: 2 People

Cook Time: 45 minutes

Total Time: 50 minutes


INGREDIENTS

  • 1/2 lb. Beef Stew Chunks

  • 1/2 bag (6 oz.) Frozen Cut Green Beans, thawed

  • 1 6 oz. can Tomato Paste

  • 1cup water

  • 1 Small Onion, chopped

  • 1 tsp. Cumin

  • 1 tsp. Mixed spice

  • 1/2 tsp. Garlic Powder

  • 1/4 tsp. Onion Powder

  • Salt and Black Pepper, to taste

  • 1/2 Tbsp. Olive Oil

  • 3 Cloves Garlic, minced

  • Handful of Cilantro, roughly chopped

INSTRUCTIONS

  1. In a medium-sized pot on medium heat, cook the beef chunks for about 6-8 minutes. Remove any fat that begins to froth over in the pot.

  2. Add the green beans and allow them to cook for 2-3 minutes as they begin to get tender.

  3. Add in 1/2 cup of the water and the tomato paste. Stir to dissolve the tomato paste.

  4. Add in the onions and the rest of the water. Add in the spices and allow to boil.

  5. Once it boils, cover the pot and continue to cook on medium-low heat for 25-30 minutes.

  6. In a small skillet, heat the olive oil. Cook the garlic and the cilantro for about 3 minutes to release their flavors. Add them into the pot and stir.

  7. Let cook for about 5 more minutes for the flavors to combine.

  8. Serve and Enjoy!
