Sandwiches are some of the quickest, yet most filling meals that you can make in my opinion! This crispy chicken sandwich is a homemade mock-up of spicy sandwiches in fast food chains. It's delicious flavors have you enjoying every bite! I made fried pickles on the side because I was craving them and the breading on them turned out so delicious! These may not be the healthiest options, but they sure are tasty!
Top the sandwich with anything you like, but I kept them on the cooler side to balance the spicy flavors of the chicken!
I also created my own dipping sauce for the fried pickles! The pickles should be served right away to avoid any sogginess.
I have been craving a crispy buffalo sandwich and fried pickles for a minute now. I try to avoid fast food because of the way it upsets my stomach so I decided to give these a try at home with my own ingredients. I still felt great after eating this meal, and I was comfortably full!
I made this meal as a late lunch and it was so good you guys! Everything is made from scratch, but it still didn't take me nearly as long as other dishes! Make the sandwich with a side of fried pickles, or some fries of your liking!

INGREDIENTS
4 Thinly Sliced Chicken Breasts
1 cup vegetable oil
1 1/2 cups milk
2 eggs, beaten
2 Tbsp. Red Hot Frank's Hot Sauce
2 cups Flour
1 tsp. Baking Powder
1 Tbsp. Garlic Sriracha Spice
1 Tbsp. Salt
1 tsp. Onion Powder
1 tsp. Paprika
1 tsp. Black Pepper
1/2 tsp. Red Cayenne Pepper
1 cup Sliced Dill Pickles, patted dry
1/4 cup Flour
1 tsp. Oregano
1 tsp. Basil
1 tsp. Salt
1/2 tsp. Black Pepper
1/2 tsp. Garlic Sriracha
1/4 tsp. Cayenne Pepper
For Toppings:
4 Brioche Butter Buns
Sliced Tomatoes
Pepper jack Cheese
Mayonnaise
Ranch
Iceberg Lettuce
For Fried Pickles Dip:
Equal amounts of:
Ketchup
BBQ Sauce
Mayonnaise
Buttermilk Milk
*This might sound gross you guys, but trust me it's so good!*
INSTRUCTIONS
Preheat the oven to 350 degrees.
In a medium bowl, whisk together the milk, eggs, and hot sauce. Once mixed, pour about 1/3 of the mix into a smaller bowl. (The larger amount will be used for dipping the chicken, and the smaller for the fried pickles. This is to avoid cross-contamination) Set aside.
In another bowl, mix together the flour, baking powder, garlic sriracha, salt, onion powder, paprika, black pepper, and red cayenne pepper. Set aside.
Starting with one slice of chicken breast, dip it into the flour mixture. Next dip it into the egg mixture for a few seconds. Shake off any excess drippings. Re-dip the chicken into the flour mixture and make sure it's fully coated.
Repeat with the rest of the chicken.
In a large skillet, heat up the vegetable cooking oil over medium-high heat.
Once the oil is ready, drop in two slices of chicken and cook for 2-3 minutes until there is a nice golden brown color on each side. Place each piece on a baking tray when fully browned.
Once all pieces have been fried, bake in the oven for another 8-10 minutes to cook all the way through.
In the mean time, mix the flour, oregano, basil, salt, black pepper, garlic sriracha, and cayenne pepper.
Using the same dipping method as the chicken, dip the pickles into the flour, egg mixture, then flour again.
Reheat the oil that was used to fry the chicken, on medium-high heat.
In small batches, fry the pickles for 3 minutes until they reach a golden brown. Place on a paper towel-lined plate.
Assemble the sandwich and make the dipping sauce.
Serve and enjoy!
