Cilantro-Mint Cucumber Salad

Cucumbers are some of the most underrated vegetables in my opinion. I love working with this food because of its coolness and refreshing taste with each bite you take from it. This salad is an all cucumber base that is flavored with lime, cilantro, mint, and of course some crushed red pepper flakes to give this dish a bit of heat. This salad is perfect next to any meal or as a light lunch during the day. I love to snack on this yummy dish if I ever get hungry!

With a lot of cooler ingredients like the lime and mint, it's a great idea to add some crushed red peppers or even some jalapenos to give the dish a little kick!

All of the flavor comes from the ingredients themselves, which means..no added spices!

As a snack, I love slicing up some cucumbers and eating them as is or dipping them into ranch. They are extremely hydrating and have many nutrients and antioxidants. This salad in particular is great because it requires almost no effort!

INGREDIENTS

  • 1 Large Cucumber, thinly sliced

  • 1 Tbsp. Cilantro, minced

  • 1 Tbsp. Mint, minced

  • 1/2 Freshly Squeezed Lime

  • 1/2 Tbsp. Red Pepper Flakes

INSTRUCTIONS:

  1. Mix all ingredients together until combined evenly.

  2. Serve and Enjoy

*Best if served cold*
