Who doesn't love a good old New Orleans-inspired dish that is not only extremely easy, but also incredibly delicious! Stuffed meats can be a bit tricky sometimes because the flavors can at times get lost in each other instead of balancing and enhancing the dish. However, I came up with a simplistic way to season and stuff this chicken with no hassle at all! I only used Weber's New Orleans Cajun Spice to season the chicken because the garlic, olive oil, peppers, onion, and cheese that are added to the chicken bring out some beautiful flavors! I baked these chicken breasts in the oven and had my entree ready in 30 minutes!
Be sure to sprinkle some more seasoning on top of the stuffed chicken once all the ingredients are added. Some of the spice gets lost when handling and cutting the chicken.
You can substitute for any color bell pepper and any onion you prefer - red onions give a beautifully sweet and flavorful taste!
Because of how much we eat chicken, I try to be as creative as possible by coming up with new ways to flavor or cook the chicken. I chose bell peppers and onions to stuff because their sweet flavors bring down some of the nice heat from the pepper jack cheese and the Cajun spice. I divided it all evenly for a perfect cook and it all came out as delicious as I could imagine!
For the bake I used a dark deep baking dish and placed the chicken inside. I covered the pan with foil to get an even cook all around the chicken. Once the chicken was done, about 25 minutes later, I took off the foil and continued to cook the chicken so it can gain a beautiful golden color on the outside!

INGREDIENTS
4 Boneless, Skinless Chicken Breasts
3 Tbsp. Olive Oil
3 Tbsp. Cajun Spice
2 Cloves of Garlic, minced
1 Green Pepper, sliced
1 Red Bell Pepper, sliced
1/2 Yellow Onion, sliced
5 Slices of Pepper Jack Cheese, sliced in three pieces each
INSTRUCTIONS:
Preheat the oven to 400 degrees Fahrenheit.
In a small bowl add the chicken breasts, oil, Cajun spice, and garlic. Coat the chicken with these ingredients evenly.
On each chicken breast, create 5 slits across the breast that each go two-thirds of the way down. Don't cut through the meat because you need the chicken to hold the peppers and onions.
In each slice, alternate putting the green and red bell peppers. In each slit put a thin onion slice.
In every other slit add a slice of pepper jack cheese so that there are three slices in each chicken breast.
In a deep baking dish, add the stuffed chicken and sprinkle the tops with a little more Cajun seasoning. Cover the pan with foil.
Bake the chicken for 25 minutes until it is fully cooked. Remove the foil and cook the chicken for another 5 minutes until the outside has slightly brown for more color.
