Baked Chicken Fajitas

Ramadan is just a week away and I am extremely excited to share all of my favorite recipes with you all! I decided to dedicate this week to quick and easy meals that you can make for Iftar on those days when you're working late or don't have time to prepare a big meal. This dish is an extremely healthy option that was prepared and cooked in 20 minutes. It was still extremely delicious and all the flavors were exquisite. I added sliced chicken breast, colorful bell peppers, sweet red onions, and an array of spices all on a baking sheet. I baked all of these ingredients to perfection and served them as fajitas with some whole wheat tortillas, a squeeze of lime, some fresh cilantro, and of course some delicious guacamole!

The more colorful your vegetables are, the tastier your fajitas will be. Vegetables, especially peppers, vary in sweetness based on the color they are and I like to throw in a few different ones to really bring out each unique flavor.

Along with the chicken and vegetables, I added sour cream, cotija cheese, and guacamole to the tortillas!

I'm always down for a super quick dinner! Especially when I have been working and running errands all day with no time to spend cooking. It's an even bigger bonus when the meal is healthy and packed with nutrients and protein to get me through the rest of the evening. I didn't feel like sauteing the chicken and vegetables in oil, so I decided to place them on a lined baking tray and drizzle some olive oil onto them and season them with some beautiful spices.


After about 10 minutes of cooking, I could already smell the amazing ingredients all coming together in the oven. While everything was baking, I took the time to make some quick homemade guacamole! Everything came together perfectly and it was a very enjoyable meal! It's extremely filling and perfect for a Ramadan Iftar!

 

Prep Time: 5 minutes Serves: 2-3 People

Cook Time: 20 minutes

Total Time: 25 minutes


INGREDIENTS:

  • 2 Boneless, Skinless Chicken Breasts, sliced

  • 1 Red Bell Pepper, sliced

  • 1 Green Bell Pepper, sliced

  • 1 Yellow Bell Pepper, sliced

  • 1/3 Red Onion, sliced

  • 1 Tbsp. Olive Oil

  • 2 tsp. Chili Powder

  • 1 tsp. Cumin

  • 1 tsp. Garlic Powder

  • 1/2 tsp. Onion Powder

  • 1 1/2 tsp. Paprika

  • 1 tsp. Salt

  • 1/2 tsp. Black Pepper

For Assembly:

  • 6 Whole Wheat Mini Tortillas

  • Sour Cream , optional

  • Limes , optional

  • Guacamole, optional

  • Cotija Cheese, optional



INSTRUCTIONS:

  1. Preheat the oven to 400 degrees Fahrenheit.

  2. On a large baking tray, line it with aluminum foil.

  3. Place the chicken, bell peppers, and onions all evenly in one layer on the baking sheet. Drizzle the olive oil all over the chicken and vegetables and coat them evenly on both sides.

  4. Sprinkle all the ingredients with the chili powder, cumin, garlic powder, onion powder, paprika, salt, and black pepper. Coat them evenly on both sides.

  5. Bake the fajita ingredients for 20 minutes, until everything is cooked through all the way.

  6. Squeeze the lime juice over the baked ingredients.

  7. Serve with tortillas and desired toppings.

  8. Enjoy!
