Vegetable Lo Mein

Another Chinese food favorite of mine is the Vegetable Lo Mein. It's so simple to make and stir-fry vegetables are extremely delicious! The salty and sweet flavors are perfect together and I really enjoy this dish with Orange Chicken and the Beef Egg Rolls I previously posted!

I sprinkled some sesame seeds to garnish for added flavor and presentation in the dish!

I love sweet and sour sauce and I incorporated it in each of my dishes when I cooked Chinese food for dinner! It adds such a unique flavor!

Are you a vegetable fried rice person or a vegetable lo mein person?! I happen to absolutely love both! We eat rice with most of our dishes so I decided to switch it up with some egg noodles in this meal. We topped the noodles with orange chicken and the soy and sesame sauce combined with the orange glaze was amazing!


It was my first time attempting a lo mein and it turned out great! It didn't take much time and it turned out very tasty! I added many different vegetables that paired well with the egg noodles. You can make this dish with regular spaghetti but I found that the egg noodles tasted much better with it. Try devouring these noodles with the egg rolls and some orange chicken for a full meal to feed your hungry family!

 

Prep Time: 10 minutes Serves: 4 People

Cook Time: 20 minutes

Total Time: 30 minutes


INGREDIENTS

  • 8 oz. Egg Noodles (thin noodles)

  • 1 Tbsp. Olive oil

  • 2 Cloves Garlic, minced

  • 1/2 cup Mushrooms, sliced

  • 1/4 cup Broccoli, roughly chopped

  • 1 Green Pepper, thinly sliced

  • 7 oz. La Choy Can Stir Fry Vegetables (1/2 can)

  • 1 cup Baby Spinach

  • 1/4 cup Baby Carrots, thinly sliced

For the Sauce:

  • 2 or more Tbsp. of Low Sodium Soy Sauce (based on taste)

  • 2 tsp. Sugar

  • 1 tsp. Sesame Oil

  • 1/2 tsp. Gr. Ginger Powder

  • 1/2 tsp. Sriracha Sauce

  • 2 Tbsp. La Choy Sweet and Sour Sauce


  • Sesame Seeds, for garnish


INSTRUCTIONS

  1. In a small bowl, whisk together the sauce ingredients and set aside.

  2. Place a large pot of water (2/3 filled) on medium-high heat.

  3. Once the water has boiled, place the noodles in the pot and cook according to the directions on the package. (Each package is slightly different)

  4. In a large wok, heat the olive oil on medium-high heat. Add in the garlic, mushrooms, green pepper, stir-fry vegetables, broccoli, and carrots. Cook for about 4-5 minutes, until tender.

  5. Add in the spinach and cook for another 2-3 minutes until the spinach is wilted.

  6. Stir in the boiled noodles with the vegetables.

  7. Add in the sauce and evenly combine.

  8. Garnish with sesame seeds and serve immediately.

  9. Enjoy!
