Simple Tropical Fruit Pizza

Are you starting to feel the absence of Summer? Well this quick and easy recipe will bring you back to the warm and sunny days of mid-July. The tropical flavors of the fruit are so refreshing and I mean 'it's healthy if it has fruit on top', am I right?

Make a design with the fruit to wow your guests with this simple dessert! It's so appealing to the eye.. and to my stomach as well!

Choose fruits with bold and bright colors that will stand out against each other. When they are placed against the icing they look so beautiful!

Fruits are some of my favorite things to eat. I can snack on them all day and they are just so refreshing! Some favorites include raspberries, mangoes, and of course, you can't go wrong with a crisp red apple.


However, with this recipe, you don't just want to choose your favorite fruits! You want to pick fruits that don't brown once you slice them such as bananas or apples. Instead, go for ones that stay looking fresh. Some fruits that I recommend using with fruit pizza are:

  • Any berries (strawberries, raspberries, blackberries)

  • Mangoes

  • Kiwi

  • Mandarin Oranges


This recipe can also be used with different cookie dough's too! I prefer a sugar cookie base because it compliments the fruit really well. But don't be afraid to try new things, You might end up loving it your way!

Prep Time: 10 minutes Serves: 10 People

Cook Time: 15 minutes

Total Time: 25 minutes


INGREDIENTS

  • 1 Tube of ready-made sugar cookie dough

  • 12 oz. of Cream cheese, softened

  • 1/2 tsp. Vanilla extract

  • 1/3 cup Sugar

  • 1 Kiwi

  • 1 Handful of Blackberries

  • 5 Strawberries

  • 1/2 Peach

*Substitute any fruit you don't wish to use, with other fruit!*


INSTRUCTIONS

  1. Preheat oven to 375.

  2. Roll out cookie dough onto a cookie sheet or a pizza pan, whether you want a circular or rectangular shape.

  3. Bake in the oven for about 12-15 minutes, until golden.

  4. While the cookie is baking, mix the cream cheese, sugar, and vanilla with an electronic mixer.

  5. Place the 'icing' in the fridge.

  6. Once the cookie is done baking, take out of the oven and cool at room tempterature.

  7. Refrigerate the cookie for about 10 minutes until chilled.

  8. After it has chilled, take it out of the fridge and spread the cream cheese icing all over the cookie base.

  9. Arrange fruit on top as desired.

  10. Refrigerate until it is ready to be served.

  11. Slice and serve!
