Chicken Fajita Pasta

Mama Mia, it's another pasta recipe! But who is really upset at that? Pasta is such a great base for dishes and I love experimenting with different flavors and ingredients to create pasta-worthy meals! This time around I decided to blend Italian cuisine with Mexican flavors to come up with an extremely quick and delicious dinner! I cooked this meal in just under half an hour and it's so far one of my favorite ways to eat fettuccine pasta. I flavored this pasta with mild salsa, sauteed peppers and onions, avocado, and my favorite topping - caramelized chicken breast! Everything came together to create a yummy masterpiece that you can enjoy with family!

I used mild cheddar cheese in this dish but you can really use whatever cheese you like! I would stick to cheeses like cheddar, mozzarella, Mexican blends, or Monterrey jack!

Cilantro makes this dish pop! Add it at the end to tie everything together into one delicious plate of pasta!

You guys asked me recently to come up with quicker meals that are still delicious and feed the family. This one is definitely going to win the hearts and stomachs of your family members! You'll also love it to because you'll be in and out of the kitchen in less that 30 minutes for it all!


I love how the fettuccine picks up the flavors of the salsa and the spices in the chicken. I suggest sticking with fettuccine of linguine since they are thicker and can hold more flavor! Another optional ingredient that really brought extra flavor to this recipe was fresh lime juice. I squirted some lime juice on top of each plate after the pasta was served and it was so delicious!

Cook Time: 20 minutes

Total Time: 30 minutes


INGREDIENTS

  • 6 oz. Fettuccine Pasta

  • 2 Tbsp. Olive Oil

  • 1 Green Bell Pepper, thinly sliced

  • 1 Orange Bell Pepper, thinly sliced

  • 1/2 Red Onion, thinly sliced

  • 1/2 tsp. Salt.

  • 2/3 cup Mild Red Salsa

  • 1/2 cup Mild Cheddar Cheese

For the Chicken Marinade:

  • 1 Boneless, Skinless Chicken Breast, sliced

  • 1 Tbsp. Lime Juice

  • 1 Tbsp. Soy Sauce

  • 2 tsp. Honey

  • 1 tsp. Paprika

  • 1/2 tsp. Salt

  • 1/2 tsp. Cumin

  • 1/2 tsp. Garlic Powder

  • 1/4 tsp. Black Pepper

  • 1/8 tsp. Cayenne Pepper

Optional Toppings:

  • Lime Juice

  • Cilantro

  • Chopped Avocado


INSTRUCTIONS:

  1. In a small bowl, add the sliced chicken breast and all of the marinade ingredients for it. Make sure the chicken is coated evenly and allow the chicken to marinate for about 10 minutes.

  2. In the mean time, boil your pasta according to the package instructions.

  3. In a large skillet over medium- high heat, heat up the olive oil. Add in the green pepper, orange pepper, red onion, and 1/2 tsp. of salt and saute until the veggies become tender, about 7-8 minutes.

  4. Push the veggies to the side of the skillet and add in the chicken breast. Don't mix the veggies and chicken just yet, allow the chicken to cook and brown on the outside, about 10 minutes.

  5. Once the pasta is cooked and drained, add it back to the pot with the salsa, cheddar cheese, veggies, and chicken. Mix well.

  6. Top with avocado, cilantro, and lime juice.

  7. Serve and enjoy!
