Apple Cinnamon Cake

Fall is finally here! And even though the weather in St. Louis isn't helping out with the festivities that October brings, this mouth-watering cake will hopefully spark some Fall inspiration! It's also a perfect dessert to bring to any Autumn potluck you might have! I made a simple cake using ready made cake mix with a few added ingredients like applesauce and cinnamon!I then topped it off with a creamy brown sugar glaze and sliced apples for a finishing touch!

I love designed cake tins! They make a plain cake look so pretty and presentable to guests! However, you can easily make this recipe in a 9x13 baking dish as well!

The aroma of the apples and cinnamon in the base of the cake, mixed with the caramelized brown sugar in the glaze perfectly suits anyone's palate!

I don't know about you all, but Fall is by far my favorite season of the year! It's filled with beautiful colors, perfect weather, cozy sweaters, and not to mention the AMAZING food! When people think of Fall foods they automatically think pumpkin everything! However, many people forget the incredible recipes that can be made with apples and cinnamon!


This apple cinnamon cake has been around our families for years. My mom would always make this simple, yet tasty dessert whenever she was in a hurry to whip something up for guests or a small event. I decided to take this recipe and put my own little twist on it, so that I can sweeten things up a bit more.


Now this cake is perfect on its own without the glaze, if you choose to opt out and make it a healthier dessert option. Though in my opinion, this glaze gave the cake and myself life and I am positive you will not regret that decision!

 

Prep Time: 10 minutes Serves: About 10 People

Bake Time: 55 Minutes

Total Time: 65 Minutes


INGREDIENTS

For the cake:

  • 1 Box of Yellow cake mix

  • 2 Cups Applesauce

  • 3 Eggs

  • 1/2 Cup Unsalted butter

  • 2 tsp. Cinnamon

  • 1/4 Cup Sugar

  • 1 Apple, sliced thinly

For the glaze:

  • 4 Tbsp. Butter, cut into chunks

  • 1/2 Cup Brown sugar, packed

  • 1/3 Cup Heavy cream

  • 1/4 tsp Kosher salt


INSTRUCTIONS

  1. Preheat the oven to 350 degrees

  2. Grease the pan you choose to bake your cake in - if you choose to go with a bundt pan, make sure to grease all edges and crevices of the pan so the cake doesn't get stuck after baking.

  3. As the oven preheats, pour all the ingredients for the cake in a medium-sized bowl.

  4. Mix the ingredients together with either a whisk or an electric hand mixer (I prefer the electric because it insures grabbing all dry ingredients from the bottom of the bowl).

  5. Pour contents into the greased baking pan and top with sliced apples.

  6. Bake for 55 minutes, or until cake is a light brown on top and a toothpick comes out clean from the center.

  7. Once the cake is done, take it out of the oven and allow it to cool for 10 minutes on a cooling rack.

  8. While you wait for the cake to cool, begin making the caramel glaze.

  9. Place a cooling rack on the table and put a piece of aluminum foil to catch any drippings of the cake.

  10. In a medium saucepan, put the butter, brown sugar, cream, and salt over medium heat.

  11. Bring the mixture to a rolling boil, while stirring consistently.

  12. After boiling for one minute, remove the mixture from the heat.

  13. Once the sauce has reached the desired thickness, pour immediately over the cake.

  14. Try to cover as much of the cake as possible with the glaze.

  15. Allow the cake and glaze to cool and set completely before attempting to transfer it to another plate (TIP: do not carry the cake off of the cooling rack with your bare hands. Use a large spatula or a flat plate to assist!)

  16. Serve and Enjoy!
